Delicious and Healthy Homemade Apple and Cinnamon Oatmeal. A Kids Favorite!

What screams winter more than fresh Overnight Apple & Cinnamon Oatmeal? We are now full swing into winter, most of you have been for awhile, but we took a quick jaunt to Tampa, FL where we escaped winter’s grasp for about 7 days.  We timed our travel back to Colorado perfectly as we parked our RV just as the winter storm was picking up speed.  About 18” later and still snowing and we are feeling so blessed! We are the opposite of snowbirds, we actually follow the powder!!

So what does a family who lives in an RV with a gazillion kids and a huge age range do when it snows? Everything.  We aren’t limited to little kids’ interests or big kids’ interests.  We run the gamut.  We make snowmen, we make forts, we have snowball fights, we go sledding, we go snowboarding, we play paintball, we make snow angels & we even go to the Iron Mountain Hot Springs Pool or soak in the free hot springs along the river.  

Keeping warm is top priority as is eating healthy to stave off the illnesses that are rampant in the winter.  One of our favorite winter meals, beside hot chocolate, which we all really consider one of the four food groups, is Oatmeal.  Overnight Apple & Cinnamon Oatmeal to be exact.

I’m a huge fan of steel cut oats.  Steel-cut oats are whole grain, essential grains, that pack a nutritional punch with every spoonful.  They are rich in B-vitamins, calcium, protein and fiber.  Steel cut oats are simply oats which have been cut into pieces and the least processed of all oats.  They have a low glycemic index which makes you feel fuller longer which is a huge bonus for my “hungry five minutes after eating” crew of kids.  

At least a few times per week we have some variety of oatmeal, typically made in the crockpot and cooked overnight.  Our absolute favorite recipe is what we call Apple Crisp Oatmeal.  It’s so easy the kids often make it before we go to bed and then we wake up in the morning, the whole RV smelling of apples and cinnamon.  

Overnight Apple & Cinnamon Oatmeal

Ingredients

  • 2 c. water (I’ve also used 1 c Almond Milk and 1 c water which is also yum!)
  • 3/4 c. of freshly juiced Honey Crisp apples 
  • 1 c. steel cut oats
  • ½ tsp. cinnamon
  • ½ tsp. ground nutmeg
  • 1-2 tsp brown sugar
  • ¼ tsp. salt
  • 2 honey crisp apples -peeled (optional) and diced into chunks
  • For Toppings:
  • Brown Sugar
  • Browned Chopped Pecans
  • Maple Syrup
  • Cinnamon
  • granola
  • dates
  • Raisins
  • Honey

Directions

  1. Spray your crock pot with non-stick cooking spray (for real).
  2. Throw everything in the crock pot, set for 8 hours on low. 
  3. Wake up, smell the deliciousness and dig in!  🙂
